Babies, beanies and blueberries… does life get cozier?! This month has been so busy between work projects and prepping for Ev’s first Christmas. We’re indulging in allll the firsts — from a trip to see Santa, to hanging his first ornament, to sleeping in festive pj’s. Admittedly, though, all the fun has meant less sleep and not enough attention on my health… (and more than a few sick days for me).
So, I’m making an effort to take a #blueberrybreak between all the shopping and cookie-eating as one way of giving my sleepy mama brain a well-deserved boost. Blueberries are super energizing and refreshing, and you can get them fresh all year long. Plus, they’re a good source of fiber and Vitamin C, which acts as an antioxidant.
I have a few favorite blueberry recipes that keep me full while also satisfying my sweet tooth! Typically, I try to make a protein smoothie every day — and have it either as a bowl with fresh berries and coconut flakes, or in a glass. It follows the same formula from my nutritionist that I’ve been using for years now (Kelly LeVeque is my foodie genius who has guided me on my eating habits before, during, and after pregnancy.
BLUEBERRY COCONUT SMOOTHIE | 1/4 c blueberries | 2 tbs shredded coconut | 1 tbs almond butter | 1 tbsp coconut oil | 1 tbsp tbs chia seeds | 1 c vanilla almond milk | 1 serving vanilla protein powder | ice | blend until smooth | enjoy in glass or bowl
BLUEBERRY COCONUT BOWL | 1 c greek yogurt | 2 tbsp freshly mashed blueberries | 1 tbsp chia seeds | 1 tsp honey | blend well | top with coconut flakes + fresh blueberries
PLUS, little Evan Grey just tried mashed blueberries for the first time, buuut he wore more of it than he ate (we’re still working on liking anything but mama’s milk) 😉
