YUM! Hump days are for something sweet. You’ll love these coconut milk + berry popsicles. They’re deliciously healthy and totally Instagram-worthy [duh]. Plus, the red, white and blue make them the perfect treat for Memorial Day at the end of this month!
This cold springtime treat is guilt-free and simple to make. These popsicles only require about 5 minutes of prep time and a few hours in the freezer. Watch this video for how to make them… [PS. how-to videos are now coming to you every Wednesday]!
INGREDIENTS: 1/2 cup raspberries | handful of mint leaves | 1/2 cup blueberries | 1/2 cup honey | 4 cups coconut milk | 2 cups coconut water | popsicle mold
*** makes roughly 8 popsicles, depending on the size of your molds [adjust accordingly]
DIRECTIONS: Mix coconut milk, coconut water + honey in a liquid measuring glass [this makes pouring easier] | place a couple of mint leaves + a handful of assorted berries in each popsicle mold | fill each mold with coconut mixture | freeze for 3 hours or overnight | Take popsicles out of the mold + enjoy!
