Happy weekend! I’m still indulging in all things baby over here, but I’ve been wanting to share this summertime sweet with you because it’s SO GOOD. Healthy ice cream sandwiches? YEP. And they are to die for. Plus, they’re super fast to make this weekend.
I feel nostalgic about stuffing something sweet between two graham crackers. Healthy ice cream sandwiches are seriously a dream and I’ve started to make them from home every week. My favorites? Mint chocolate chip + mixed berry.
I lust after any dessert that’s not absolutely terrible for me, which is why I love this recipe. Here’s how to make this sweet treat yourself this week…
INGREDIENTS: 2 cups low-fat cool whip (or preferred whipped cream) | 2 cups vanilla yogurt (or greek yogurt, if you prefer) | graham crackers | 1 cup mixed berries | 1 cup mini chocolate chips | handful of fresh mint leaves |
METHOD: Whisk together cool whip + vanilla yogurt in a mixing bowl | Divide mixture in two | In the first bowl, stir in mixed berries | Line a baking sheet + place separated graham crackers on top | Spread the berry mixture evenly on top of each graham cracker + top with a second cracker (to create sandwiches) | Freeze for 4 hours | Second Flavor | Pour the other bowl of yogurt filling + mint leaves into a blender | Blend until smooth | Mix in mini-chocolate chips | Repeat the method above on a baking sheet
