Peanut butter is my soulmate. We’ve been in love for decades. When I find a way to throw a little PB into pretty much anything, I share the recipe. Especially when it’s a healthy(ish) mix! These peanut butter and oatmeal energy bites are to DIE FOR, and you can substitute ingredients depending on when you serve them. Think chocolate chips, dried cranberries, raisins, coconut… you name it! These peanut butter balls can be a sweet treat, or even a breakfast snack. You’ve probably seen me make them on Insta stories!
For the ones below, I added dark chocolate chips. I’ve also dipped this treat in melted dark chocolate and popped them in the freezer (AMAZEballs, pun intended). My point? You can get creative! Best part is, they’ll only take about 10 minutes to prep. Perfect if you have friends over. I made these all weekend while having family in town for my baby shower! INGREDIENTS | 1 c peanut butter | 1 c oats | 1/3 c shredded coconut | 1/2 c chocolate chips | 2 tbsp honey | 3 tbsp chia seeds | makes 8-9 bites
Combine all ingredients in a medium-sized bowl | Stir until everything is well-mixed
Form the mixture into bite-sized balls | Refrigerate for 15-20 minutes before serving
Top with leftover shredded coconut so the sweet treat looks extra tasty
